An amber pour with hazelnut and dried fig on the nose, whispers of toffee and leather beneath, and a very dry, structured body that feels generous without heaviness. Two decades of deliberate transformation show in every sip—biological ageing under flor yeast builds savoury, bread-like character before oxidative ageing concentrates the wine naturally to 18% ABV. The result tastes both deliberate and alive, with a real mineral spine and balance.

The Winery — Valdespino

One of Spain's oldest bodegas with winemaking roots stretching back six centuries, Valdespino was acquired by the Estévez family in 1999. They own 750 hectares of vineyards in Jerez, including the renowned Macharnudo Pago, whose chalky albariza soil at 135 metres above the city produces Palomino grapes of exceptional quality. This vineyard ownership allows very close control over every vintage, and Valdespino are among the few bodegas to make single-vineyard Sherries, celebrated for their VOS (over 20 years aged) and VORS (over 30 years aged) expressions. This NV Amontillado brings more than two decades of patient cellar work, fermented in American oak and aged through both biological and oxidative phases before bottling.
