In the Glass — Tasting Notes

Pale straw-gold with an unmistakable aromatic lift: sage, hay, almond and sandalwood leap out, followed by honey and lime blossom as it opens. On the palate it's precise and medium-bodied, with finesse from grapes picked at their peak. At 13% alcohol and just 3g/L residual sugar, it's bone-dry and refreshing without hard edges. This white drinks beautifully young, yet has enough structure from four months on the lees to reward a year or two in your cellar.

The Winery — Franz Haas

The Haas family has farmed these steep slopes in Bolzano for generations, but it was Franz who transformed them into serious producers. A student of German winemaking traditions and a broker of Italian wines before taking over the family operation, Franz built a reputation for rigorous viticulture and an ethos centred on purity. The magic lies in vineyard sites across both Alto Adige and Trentino, with the highest parcels climbing to 750–900 metres—cold nights up there preserve aromatic depth that separates ordinary Pinot Grigio from one worth seeking. Lower Trentino sites bring weight and structure; stony, limestone-rich soils echo in the mineral backbone. The 2025 vintage was kind: a cool summer and steady ripening at altitude meant the fruit developed true varietal character. Hand-harvesting and careful selection ensured only the best made it to the winery. Fermentation in stainless steel at cool temperatures locked in delicate floral notes—a philosophy refined over decades of studying how to let the fruit speak for itself. Though Franz passed away in 2022, his imprint remains on every bottle: wines of rare clarity and balance.
