In the Glass — Tasting Notes

This Sauvignon Blanc opens with immediate aromatic presence: citrus brightness layered beneath sage and basil. The palate delivers mineral grip wrapped around passion fruit, with the freshness that comes from cool-climate ripening and skilled winemaking. At 14% ABV with crisp acidity and virtually no residual sugar, it's food-friendly without being thin. Eight months on lees before bottling, then nine more in bottle, underpin its rounded, fuller style, and the finish is long and lingering.

The Winery — Vie di Romans

Gianfranco Gallo tends 50 hectares in the heart of Isonzo, where stony, glacial soils and a cool east wind slow ripening and build flavour intensity. His philosophy of low yields and late picking ensures grapes arrive with distinct character. For the challenging 2023 vintage — which swung from cold through hail to record heat — Gallo's approach proved decisive: a cold soak at 8°C preceded a measured fermentation at 16–19°C lasting 18–19 days, preserving aromatic purity and allowing the herbaceous signature to emerge. No malolactic fermentation occurred, keeping acidity bright and green-flinty minerality intact. The wine was held a year longer than usual before release, allowing complexity to develop fully.

At Your Table — Food Pairing & Serving

The acidity and herbaceous edge are made for asparagus, goat cheese, and poached chicken. Equally at home with shellfish, white fish, and lighter salads, this is a wine that rewards unhurried sipping chilled. It sits alongside our Light & Crispy White Wine selection as an easy reach for summer eating, and for anyone looking to explore what cool-climate Sauvignon Blanc can achieve when a producer refuses to chase ripeness at the expense of character. Ideal for date nights, gifting, or as an aperitivo. Vegetarian and vegan-friendly. One of the finest expressions of Sauvignon Blanc from Italy's north-east.
