The palate balances real structure with cool, bright acidity; a year in old French oak and aging in large Slavonian casks soften the wine without heaviness. It finishes long and dry, built for appetite rather than show.

The Winery — Gašper

Gašper is a partnership between the local cooperative and the Čarman family, wine professionals for over fifty years, working old vines on flysch and marlstone soils in Goriška Brda. Oenologist Darinko Ribolica crafts Ribolla Gialla in a modern, fresh style rooted in local tradition. The 2021 vintage benefited from delayed budbreak and later flowering, which allowed grapes to ripen slowly and build the acidity and fruit intensity in the glass. Hand-picked and destemmed fruit underwent brief skin contact before cool fermentation to lock in freshness and aromatic depth.
