Bone-dry and luminous, this 100% Mandó rosé delivers precision over sweetness. Wild plum skin and citrus blossom cut through a spine of crisp acidity, the whole taut and alive. Fermentation begins in stainless steel and finishes in old clay amphorae with indigenous yeasts, lending a textural subtlety that belies its 11.5% alcohol—a wine to drink, not to admire.

The Winery — Celler del Roure

Pablo Calatayud founded Celler del Roure in 2000 and now champions traditional methods and forgotten regions as part of a new generation of Spanish winegrowers. At his certified organic estate in Moixent, 70 miles southwest of Valencia, he works alongside winemaker Paco Senis using indigenous yeasts and buried clay amphorae—'tinajas'—to capture authentic expression of traditional Valencian terroir. Grapes for Les Prunes come exclusively from Bosquet i Pitxó, a two-hectare parcel of predominantly sandy soils close to the winery. The 2024 vintage benefited from dry conditions and early harvesting that locked in citrus and floral brightness. Six months in tinajas adds texture without oak interference, allowing the Mandó grape and site to speak plainly.
