Aromatico draws on two plots: Gewürztraminer grafted onto pre-existing Merlot vines on Protero's gentle north-east facing slope at 500m, and Riesling from a neighbouring vineyard facing south-west on grey loam over granite-flecked clay. The 2023 growing season was cool and wet, delaying harvest but rewarding patience with long hang times and elegant wines of great flavour despite low yields. Fermentation began in May and ran a slow eight weeks, leaving a touch of residual sugar. Vegetarian and vegan-friendly.
