The Winery — Trinity Hill

Founded in 1993, Trinity Hill recognised the Gimblett Gravels' outstanding potential when others saw only barren ground. The estate vineyards occupy soils shaped by ancient river courses: loose gravel with minimal topsoil that forces vines to work and concentrates flavour into smaller crops. Winemaker Warren Gibson, at the helm since 1997, hand-harvested from the Tin Shed and Gimblett Stones blocks, fermented each separately to build depth, then aged the wine 12 to 15 months in French oak ovals. The result reflects three decades of consistency—a wine that tastes honest and delicious, neither overworked nor under-extracted.
