The Winery — Maison de Montille
One of Burgundy's most historic family estates, now led by ninth-generation Etienne de Montille, who inherited a radical legacy: his father Hubert pioneered estate-bottled wines when négociant sales dominated the region. Etienne, trained as a lawyer, returned to rebuild the domaine into one of the Côte d'Or's finest holdings—37 hectares across 35 appellations. He introduced organic farming in 1995 and adopted biodynamic practice five years later, earning Ecocert Bio certification. The Pomone vineyard's deep, east-facing soils allowed slow, even ripening. Grapes were hand-sorted; fermentation remained gentle with careful punch-downs to preserve delicate structure. French oak ageing and light filtration complete the cellar work.
