Equal parts Chardonnay and Savagnin meet four years in oak and under flor to create a straw-coloured wine of real grip. Roasted hazelnut, almond and walnut mingle with wet-stone minerality and sea-salt snap, the grey Lias marl providing backbone without heaviness. The Winery — Domaine Rolet

Founded in 1942, Domaine Rolet has grown into the region's second-largest independent grower, now led by a young, dynamic team under Cédric Ducoté since 2018. The estate tends over 65 hectares where each of Jura's five varieties finds its perfect soil match on steep hillsides. Head viticulturist Louis Morel oversees organic conversion whilst winemaker Chloé Weber employs modern techniques to craft balanced, mineral-driven wines. The 2018 vintage, blessed by sustained warmth, brought grapes to genuine ripeness. Every bunch was harvested by hand, sorted with care, then fermented separately in stainless steel before its patient cellar journey.
